my lovely dinner

I don't know why I didn't really post today. I've been in a really good mood and I guess I didn't want to label it or announce it or say why. I just wanted to let it be what it was.
But I do want to post about the great dinner I made for myself tonight. I marinated a piece of boneless skinless chicken breast in tomato juice with a little soy sauce and left it in the fridge for the day. When I got home I cooked it in a little olive oil, took it out, and in the leftover oil I sauteed one chopped onion. Then I mixed that with 1/2 a cup of cooked quinoa (which I now love, by the way) and about 1/4 cup of freshly grated parmesan and a little chopped parsley. It was all totally yummy. I think it really helped cooking the onions in the chicken pan. The tomato juice also really made the chicken delicious. I just did that on a whim because I have some leftover tomato juice in the fridge. And it was all really quick. I'm not a big rice person, it never seems to come out right when I cook it, but I loved the quinoa. I highly recommend it!
Then for dessert I had butter pecan ice cream with some Trader Joe's maple nut crunch cereal and some light amber maple syrup drizzled on top. SO good. I ate that while watching last week's Everwood. My boyfriend Ephram is SO cute. :-)
It is actually cool enough outside that I am wearing my flannel PJs and fleece slippers. Yay for flannel PJs!
