The manic chef strikes again

nycmermaidFirst let me say, crazy screaming freaks on the train can kiss my ass. You don't scare me, you crazy fuck. I'm going to sit right here, keep on knitting, jack up the volume on my headphones and pretend you're not there. What are you going to do, kill me? I didn't think so. Keep right on with your yelling. I can't hear you. LA LA LA LA LA!
I made some friggin awesome banana chocolate chocolate chip muffins last night. I've had this box of Trader Joe's chocolate chip baking and pancake mix around for awhile. I wasn't crazy about the pancakes it made (even though everyone else raves about them). I also had one very ripe banana. There was a muffin recipe on the side of the box, and I added the banana to it and cut the oil from 1 cup to 3/4 cup. I could have cut it even further because these muffins are uber-rich and moist. 1 cup of oil would have been insane, next time I'm only using 1/2. I love Trader Joe's. I hope to go back there soon (unfortunately they're all out on the Island). I also made spinach tofu lasagna last night. Yummy and good for you! Especially with fresh mozzarella on the top, mmmmm.
So I ate my yummy chocolate muffins while watching the end of The OC, which, as Ellen would say, freaked my freak. Yes I know it was cheesy and overdramatic and the choice of music at the end was pretty weird, but that was pretty like WHOA. I think that's a fitting description. Seth's line about Oliver was the high point of that very absurd episode for me though.
I can't stop coughing since I got to work. Will someone please get this tickle out of my throat?
I dare today to be better than yesterday. I triple dog dare it.
